Cranberry White Chocolate Christmas Cookies

Chewy, tangy, and perfectly sweet Cranberry White Chocolate Christmas Cookies!

Well, it has certainly been a while since I’ve been on here. Like, far too long and I solemnly swear I will never go that long again. I know I have fans here (hi!) so I’m sorry you’ve all missed me SO MUCH. 😉 Anyway, I’m BACK today with a delicious recipe for Cranberry White Chocolate Cookies!

Every year I flip-flop on my favorite holiday: some years it’s Thanksgiving and some years it’s Christmas. Truth be told, I think I like both because I get to spend time with my family + close friends because we all have time off from school and work. I actually had to work on Thanksgiving this year but I did the traditional turkey feast the Saturday prior with my dads side of the family and spent the Saturday after with my mom! I also happened to have a birthday at some point in there 😉 Matt + I did a little shopping – okay, looking – and dinner at Greek Islands! SOOO GOOD. We can catch up later –> let’s get into these cookies!

Cranberry White Chocolate Cookies

I have been making these Cranberry White Chocolate Cookies for a few years now. One year, I just decided I wanted to bake something different from the standard chocolate chip so, white chocolate + cranberry it is! And so I’ve been perfecting them ever since. Side note: Betty Crocker sells an easy-to-make cookie mix as a seasonal offering!

What I did to really perfect these cookies is take my chocolate chip cookie recipe and adapt for a lighter, nuttier tasting cookie. And the combination of creamy white chocolate + tangy dried cranberries = the perfect combination. These cookies are especially chewy because, like my chocolate chip cookies, I add just a bit of corn starch. Weird, I know, but SO GOOD. I add corn starch to practically all of my cookie recipes now because who doesn’t love a chewy cookie? Well, chewy on the inside and a li’l crunch on the outside. YES. PLEASE.

Cranberry White Chocolate Cookies

  • Yield: 2-3 dozen cookies, depending on cookie size
  • Prep Time: 10 minutes
  • Cook Time: 8 minutes

  • 3/4 cup unsalted butter, softened
  • 150g dark brown sugar, packed
  • 50g granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 250g all-purpose flour
  • 1 tsp corn starch (optional)
  • 1 tsp baking soda
  • 1 tsp salt (or 1/2 for less-salty cookies)
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries

  1. Preheat oven to 350F and line baking sheets with parchment paper, a baking mat, or non-stick spray.

  2. In a large bowl, cream the butter, sugars, egg, and extracts together. You should use a stand mixer or hand mixer if you have one but if not, a trusty whisk + your hands will do just fine.

  3. In a separate bowl, combine the flour, baking soda, and salt together.

  4. Working in batches, add the dry mixture into the wet mixture bit by bit until everything is mixed well. You can continue using your stand or hand mixers at this point.

  5. Once the dough has been formed, add the white chocolate chips + cranberries into the mix. Experts (like Martha) say to mix these in using a wooden spoon but that's too much work for me. Your electric mixers are good in this home.

  6. Form the dough into balls and place on your baking sheet. Bake for 8 minutes and take out, resting on the stovetop for about a minute before placing onto a cooling rack. You can do 2-3 batches at once if you've got the space - the cookies will still turn out great!

Bake on parchment paper or baking mat for even baking throughout.
