Burrata Bruschetta Crostini

These Burrata Bruschetta Crostini make a simple and colorful addition to any meal. Whether you’re having a special dinner at home or serving up friends at a party, you’ll want to have these Burrata Bruschetta Crostini on deck!

I have a confession to make: I didn’t hop on the burrata train until earlier this year. Like, it’s just cheese, right? Wrong. So, so wrong. Burrata is like this perfect li’l mozzarella ball with a creamy inside. And it’s best served alongside some cured meat, fresh tomatoes, and toasted bread. That sounds like heaven, right?

Right. So I whipped up a very simple, very delicious appetizer for y’all. It’s nothing groundbreaking but it combines some of the best flavors in one bite: creamy burrata, fresh basil, bright, cherry tomatoes, and oiled, garlic crostini. A li’l twist on your classic bruschetta, if you will. This Burrata Bruschetta Crostini recipe makes an excellent appetizer for a special dinner at home. Or maybe you’re throwing one last soak-up-the-sun hurrah and you’re looking for something you can whip up outside with your guests! Serve up everything on a beautiful cheese board and you’re good to go!

Burrata Bruschetta Crostini

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes

Ingredients

  • 1 loaf of Italian bread
  • 4 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 3 cups cherry tomatoes, halved
  • 1 tsp salt
  • 10-15 fresh basil leaves, roughly chopped
  • 2 burrata balls (approx. 4 oz burrata)

Instructions

  1. Preheat oven to 350F. In a bowl or a jar, mix together olive oil and minced garlic cloves. Set aside.

  2. Slice Italian loaf into bite size pieces (crostini). Place crostini on a baking sheet. Using a cooking brush, brush olive oil + minced garlic mixture onto the crostini. Toast in oven until crostini reaches a nice, golden color (8-9 minutes).

  3. While crostini is toasting, halve your cherry tomatoes and mix with remaining olive oil, salt, and chopped basil to taste. Be sure to save some basil for topping at the end!

  4. After you've removed crostini from the oven, top with about a teaspoon or two of burrata. Top with tomatoes and more fresh basil!

Notes

You can also whip up the Burrata Bruschetta Crostini on the grill. Just warm up your grill over medium heat in place of using the oven! Voila!
