Happy Monday! I hope your week is off to a great start. I’m so happy that my workdays are spread out this week – compared to last weeks 3-days in a row. It’s so hard to keep your life together when you’re gone for 13+ hours 3 days in a row!

On the menu this week, we’ve got RGEs Honey Chipotle Salmon with Roasted Bok Choy. I am determined to become a fish person. Or at least a person who likes fish sometimes? I’m unsure.
I tried salmon for the first time last week when Matt whipped up a ginger-soy marinade. It was good. Different, but good. So I’m trying again this week. Salmon is high in Omega 3 Fatty Acids which are good for your brain, your eyes, your heart, uhhh, basically everything! And it’s something many Americans are really lacking in their diets. Salmon is also high in B-vitamins (helps turn calories into energy you can use) and it’s a great source of protein. Wins all around.
I’m still working my way through Rodham by Curtis Sittenfeld. I didn’t know this when I rented the book from the library but it’s all about the “what if” Hillary never married Bill.
Side note: both Bill Clinton and GWB were in my dream last night? Maybe I should lay off the melatonin.
I somehow discovered Sleepover Cinema. It’s a podcast created by 2 sisters and they discuss all of the stereotypical sleepover movies from the late 90s and early 2000s. It’s cute! I think the sisters are quite a bit younger than me but it’s still a fun, light listen.
And on my commutes this week, I’ll be listening to Kate Kennedy’s latest Be There in Five episode with Erin Heatherton.
Obviously, Summer House. And the Real Housewives of New Jersey. And it’s hometowns tonight (Monday!) on The Bachelor.
And now that we’ve all seen the Framing Britney documentary, watch the 1999 VMAs performance. (If you haven’t see the Free Britney doc… GO. NOW.)
