Sesame Ginger Chicken Stir Fry

This Sesame Ginger Chicken Stir Fry recipe is quick, healthy, and full of flavor. If you’re looking for a good meal prep recipe or just want to get dinner on the table, this recipe is for you!

I am all about living that bowl life and stir fries are an excellent bowl meal! I can never get enough bowls! And this Sesame Ginger Chicken Stir Fry is a delicious way to get your bowl fix!

Stir fries were my go-to when I was making meals-for-one in college. They’re a simple equation so they’re really hard to screw up: sauce + protein + starch + veggies. BOOM! You’ve got yourself a healthy meal in under 30 minutes. Now that I’m officially An Adult, stir fries are still a favorite of mine for those same reasons.

Sesame Ginger Chicken Stir Fry

This Sesame Ginger Stir Fry is perfectly seasoned and totally customizable. I used bell peppers and broccoli but feel free to use whatever vegetables you’ve got. Or go meatless by sauteing up some tofu or tempeh! Uh, YUM! The sesame ginger stir fry sauce is really the star of the show here so you can’t go wrong with other add-ins!

Sesame Ginger Chicken Stir Fry

  • Yield: 4 bowls
  • Prep Time: 15 minutes
  • Cook Time: 15 minutes

Ingredients

  • 1-lb boneless skinless chicken thighs (breasts work too)
  • 2 tsp salt
  • 1 tsp cracked black pepper
  • 1 broccoli crown
  • 2-3 bell peppers
  • 2 tbsp olive oil
  • 1 tbsp garlic, minced (2 cloves fresh or from the jar)
  • 1 tbsp fresh ginger (powdered ginger is fine too, just use less)
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp honey
  • 1/4 cup low sodium soy sauce
  • sesame seeds, green onion, white rice, and red pepper flakes for serving (optional)

Instructions

  1. Heat a large pan over medium heat. While the pan is heating up, cut your chicken into bite-size pieces and season with the salt and pepper. Then, slice your bell peppers into sticks and chop up broccoli into bite-size pieces.

  2. After pan is hot, add olive oil to the pan and let warm up for about a minute.

  3. While your pan and olive oil warms up, whisk together the sesame ginger stir fry sauce. In a bowl, whisk together sesame oil, ginger, garlic, soy sauce, and honey.

  4. Add chicken pieces to the pan and let cook for 6-7 minutes, making sure all sides get a nice golden color and insides are no longer pink.

  5. Once the chicken is cooked or mostly cooked through, add 1/2 of the sesame ginger sauce to the pan and toss to coat. Remove the chicken from the pan and set aside.

  6. Using the same pan, let's cook up your vegetables. Add the veggies and remaining sesame ginger sauce to the pan and toss to coat. Saute until the vegetables reach your desired doneness. For me, I needed about 8 minutes.

  7. Serve atop a bed of rice and top with sliced green onion and sesame seeds!
