It’s smoothie time! I’m utterly obsessed with this Tropical Green Smoothie for about a zillion reasons! But taste and the health benefits are right at the top.
Green smoothies are such a delicious and healthy way to kickstart your day. I mean, who knew you’d want green veggies at breakfast?!
Spinach and kale could be used interchangeably in this recipe! Although if you decide to go the kale route, I suggest using baby kale to avoid an earthy-tastes-like-the-ground flavor. Baby kale and spinach have really light, easily masked flavors so they’re perfect for fruity smoothies.
The chia seeds in my Tropical Green Smoothie can be completely omitted! But if you’ve got ’em, you should use ’em. Not only are chia seeds full of micronutrients and antioxidants, they’re loaded with fiber to help you feel fuller longer.
I also add a vanilla protein powder to this smoothie. Like fiber, protein helps you feel full. I have a hard time getting enough protein throughout the day so adding a scoop to my smoothie is a no-brainer.
Making your breakfast smoothies a week ahead of time is super easy. (I just figured out how to do it…) If you’re not drinking your smoothie right away, portion into freezer-safe jars and store in the freezer. The night before you plan to drink your smoothie, remove from freezer and let thaw in the fridge.
And if having a smoothie for breakfast means I can have caramelized onion & sausage pizza for dinner, I’m all for it. It’s all about balance, right?
Tropical Green Smoothie
- 2 cups baby spinach
- 1/2 cup greek yogurt vanilla or plain works!
- 6-8 oz coconut water less coconut water = thicker smoothie
- 1 banana
- 1 cup frozen mango chunks
- 1 tbsp chia seeds
- 1 scoop vanilla protein powder optional
- Toss everything in a blender and blend until smooth. Serve immediately.
